It’s more than a name. It’s a place, a moment in history, and a reminder that some of the most important things happen quietly beneath our feet.
Long before our family cared for this orchard, the hillsides were settled by early farming families determined to make a life from this rugged landscape. The land was fertile, the climate ideal—but there was one problem.
Water.
They believed water was hidden deep within the mountain, trapped in layers of stone from seasons of rain long past. So they did something remarkable.
They began cutting a tunnel through solid rock.
Not for weeks. Not for months. For years.
Finally, in 1886, water emerged.
That tunnel still provides water to the orchard today.
Every morning as we walk among the olive trees, it’s humbling to think that the same source sustaining them now was uncovered nearly a century and a half ago through patience, ingenuity, and determination.
When it came time to name our olive oil, there was only one choice.
CUT1886 is our tribute to that remarkable piece of the orchard’s history.
It’s a reminder that exceptional olive oil doesn’t begin with the harvest. It begins with healthy soil, clean water, careful stewardship, and respect for the people who understood this land long before we did.
Every bottle is connected to that story.
